Awan is an ank. That is strange, but his profession is even stranger: he’s a chef. Why there’s a ank in this island, you might wonder. Well, the answer is a little bit tricky. Awan was tired of the poor taste his partners had in Ankora, so he came to Qü to experiment ant try new things. Here it is one of his recipes, a mixture of ank and qüido style.
Special Qüido Sauce (Awan style)
- 1/2 cup of soy sauce
- 1/2 cup of rice vinegar
- 1/2 cup of mirin
- 1/2 cup of brown sugar
- 1/2 cup of water
- 1 garlic
- A touch of gigner
- A touch of sesame oil (optional)
You will get this sauce in just ten minute. It’s great for chicken and for some fish like salmon. It’s really simple and anyone can make it in their own homes, you just have to be very careful with the times and with the heat of the saucepan.
First, gather all the ingredients. They should be very bright, very colorful. That means that they’re superb. Use them right!
Then, combine the soy sauce, the rice vinegar, the mirin and the water. You have to bring the mixture to a boil. Don’t touch it in the meantime. Meanwhile, chop the garlic and grind some ginger. They have to be very, very, very small. You don’t have to notice them in the final mix.
When it’s boiling, lower the heat to medium-low and add the sugar, the garlic and the ginger. Now you have to wait for the sugar to dissolve. Stir the mixture. If the sugar sticks to the bottom of the saucepan, just throw it away! Be very careful, I tell you.
Now you just have to wait for 10-15 minutes or until the sauce is very thicken.
Mix the sauce. If small bubbles appear in the surface of the sauce, then it’s ready. You can pour it in a jar or a sauceboat and wait until it’s cold. You can keep it in the refrigerator for two weeks.
Now you just have to make a really good chicken, salmon or tofu to accompany this amazing sauce.
